Green Onion, Green Pea and Chicken Salad

Green Onion, Green Pea and Chicken Salad

I made this salad for Sunday Dinner.
It was very good.

Combine in bowl:
1 bunch chopped celery
1 c. chopped green onions
3 roasted chicken breasts, torn or chopped into bite-size pieces
2 lb. fresh green peas

For the dressing:
Combine in bowl of blender:
*1/3 c. lemon juice
*2/3 c. olive oil
*½ t. dried tarragon
*Salt and black pepper to taste

Pour dressing over chicken and vegetables and toss to serve.

Carrot+Grape+Apple+Celery Slaw

I made this salad while my Grandparents were here to visit last month:

Combine in bowl:

6 grated carrots
1 bunch celery, chopped
4 c. red grapes
1 large apple, chopped
2 T. lemon juice
2 T. olive oil
1/8 t. ground cayenne pepper
Salt and pepper to taste

Sweet+Salty Ham and Vegetable Salad

Sweet+Salty Ham Salad

For the dressing:
In the bowl of a blender, or in a jar:
Combine:
¼ c. mustard
2 T. olive oil
2 T. white vinegar
½ t. freshly ground black pepper
2 T. honey

Combine in bowl:
8 c. oven roasted ham chopped
1 c. pimento stuffed green olives, chopped
½ c. black olives, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 bunch celery, chopped
1 onion, chopped

Pour dressing over ham and vegetables. Toss.

Tuna & Yellow Bell Pepper Salad

½ yellow bell pepper, finely chopped
6 oz. can Albacore tuna, packed in water
1 t. white wine vinegar
2 t. lemon juice
pinch salt and cayenne pepper

Combine all ingredients in bowl.I served this for our lunch on some whole wheat bread.

Raspberry Fluff Salad

Raspberry Fluff Salad

Combine in saucepan:
12 oz. Raspberries
1/3 c. water
3 T. cornstarch
¼ t. salt
2/3 c. honey
Cook over medium heat until thickened.
Pour into bowl, chill for 2 hours.

When raspberry jam is cooled,
ADD:
24 oz. Cottage cheese
1 pint heavy cream, whipped (folded in)1 can or 2 cups fresh pineapple
